What is your all-time favourite Italian dish? For me, I think you can’t beat homemade gnocchi. My inspiration for this challenge? Dining at an amazing Italian restaurant in Brisbane recently.
After some research, I decided to go with this simple recipe from the March edition of Delicious magazine:

Advantages of the recipe:
So you may be thinking, why bother with all the fuss of homemade gnocchi? Well, this recipe is a verrryyyy simple version of gnocchi AND the addition of asparagus, parmesan and thyme makes it a winner!
Challenges of the recipe:
Without “floury potatoes” at home (slight oversight) which I’ve read are the best to use for gnocchi, it took a little more work. However, the texture was quite good and the gnocchi was complemented by the flavours of asparagus, thyme and parmesan which were added.
